Nose: rainwater, lime turning to yellow lemon juice in the fridge, fresh cane and pastry. In short, a zesty lemon meringue pie in the rain.

Mouth: a greedy, fat attack with slivered almonds, mascarpone, egg cream, cinnamon galore, iodine and citrus but in the background.

Finale: drier but the retroolfaction is still oily and spicy. Meringue and lime zest return.

Comment: The share of aging in mellow white wine barrels brings that pastry touch that makes this pure cane juice a fine entry into the world of agricultural rums. Bielle elegance made accessible.
