Maison Génestine's Le Gaulois aperitif is a red vermouth made from Auvergne gamay grapes from Vincent Auzolle in Cébazat. Chardonnay white wine and a maceration of some fifteen plants and spices are also used in its composition. The list of ingredients is kept secret by the Génestine distillery. However, some of the plants used in the recipe are known: wormwood, hyssop, Roman chamomile and XXL Bourbon vanilla. This red vermouth is barely filtered, if at all. It is made entirely by hand. No mechanical action is involved in the production process. Even the regular stirring is done by hand. Every detail of this recipe contributes to making this a top-quality red vermouth aperitif.
