Called Defrutum in ancient times, Nostradamus qualified it as "cooked wine" in 1555!
Still made the old-fashioned way in a wood-fired cauldron, the grape must is cooked for 10 hours before being aged in barrels.
Star of Christmas in Provence with the 13 desserts, it also marvelously accompanies an aperitif, a foie gras or an almond tart.
